Yokohama Bay Hotel TokyuThe all-day dining cafe "Cafe Tosca" on the second floor will be hosting a dinner buffet themed around local ingredients, "A Food Journey to Yokohama and Kanagawa," from Friday, January 2th to Wednesday, February 1th (excluding Thursdays) only!
This fair is a "local production for local consumption" event where you can enjoy the rich flavors and umami of locally produced ingredients, and this year marks the 15th anniversary of the event, with Chef Tagyo visiting producers to continue preparations. "This is a special fair that we have been able to continue thanks to our connections with local producers. We hope you will enjoy the menu, which makes use of ingredients from Yokohama and Kanagawa," said Chef Tagyo.
"Cold Chicken and Mushrooms with Odawara Mandarin Flavor" is a refreshing cold dish where chicken is drizzled in a dressing made from Odawara mandarins, which boast the highest yield in Kanagawa Prefecture. The refreshing scent of mandarins and the perfect balance of sweetness and sourness are exquisite! Chef Shingo Takyo of Cafe Tosca
After graduating from a culinary school, he trained at hotels in the Tokyo metropolitan area. In 1997, he joined what is now Yokohama Bay Hotel Tokyu, working in the banquet kitchen and restaurant. In June 2018, he was appointed head chef at the opening of the Kawasaki King Skyfront Tokyu REI Hotel. He will assume his current position in September 6. He is dedicated to providing simple and delicious cuisine regardless of genre.
